Amy Bouchard's Old Fashioned Molasses Whoopie Pies

1 cup Vegetable Shortening
1 cup sugar
1 teaspoon salt
2 eggs
1 cup molasses
2 teaspoons white vinegar
4 1/2 cups flour
1 1/2 teaspoons cinnamon
1 teaspoon ground ginger
2 teaspoons baking soda
1 cup hot, strong coffee

Preheat oven to 350 degrees.
Cream shortening, sugar & salt. Add molasses & vinegar until well mixed, then add eggs until light and fluffy.
Mix flour, cinnamon and ginger together in a separate bowl. Add baking soda to hot coffee then add slowly to the batter until well mixed in. Add flour mixture to the batter until well blended and fluffy.
Drop tablespoonfuls or use a small ice cream scoop of batter onto a parchment lined or greased cookie sheet. Bake for 12-15 min. When cooled fill with Vanilla Whoopie Pie filling.

Whoopie Pie Filling:
1/2 cup vegetable shortening
6 Heaping Tablespoons Marshmallow Fluff
2 cups Confectioners sugar
1/4 cup milk
2 teaspoons vanilla
Beat all ingredients together until light and fluffy. You may need to add more milk.
Wrap in wax paper or plastic wrap.
